Ingredients
For the Cookies:
1 cup (2 sticks) unsalted butter, softened
¾ cup brown sugar
¼ cup granulated sugar
2 large eggs
1 ½ tsp vanilla extract
2 ¼ cups all-purpose flour
1 tsp baking soda
½ tsp salt
1 cup chocolate chips (or chopped chocolate)
for the filling
1 ½ quarts (about 6 cups) ice cream, slightly softened (any flavor you love!)

Step-by-Step Instructions
Make the Cookies
Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
In a large bowl, cream butter, brown sugar, and granulated sugar together until light and fluffy.
Beat in the eggs and vanilla extract until well combined.
In another bowl, whisk together flour, baking soda, and salt. Gradually add to the wet ingredients, mixing until just combined.
Fold in the chocolate chips.
Scoop tablespoon-sized balls of dough onto the baking sheets, spacing about 2 inches apart. Flatten slightly with your hand.
Bake for 9-11 minutes, until the edges are just golden but the centers are still soft.
Cool completely on a wire rack.
Assemble the Sandwiches
Once cookies are completely cool, pair them up by similar size.
Scoop about ¼ cup of softened ice cream onto the flat side of one cookie. Top with the matching cookie and gently press to spread the ice cream evenly.
Optionally, roll the sides of the ice cream in sprinkles, mini chocolate chips, or crushed nuts!
Place sandwiches on a tray and freeze for at least 1 hour to firm up before serving.
Tips and Tricks
Don’t overtake the cookies – instead opt for softer, chewier versions that stay that way even when frozen.
Let the ice cream soften a little before assembling the sandwich as this will make it easier for you to spread the ice cream without it melting everywhere as well.
Wrap each of the sandwiches in parchment paper individually to avoid them sticking together in the freezer.
