2 cloves garlic, minced

¾ cup whole milk or half-and-half
¼ cup grated Parmesan cheese
Salt and pepper, to taste

Gradually add milk, whisking continuously until smooth.
Stir in Parmesan cheese, salt, pepper, and optional nutmeg or lemon zest.
Simmer until thickened (2–3 minutes). Remove from heat.
Grill the Salmon
Preheat grill or grill pan to medium-high heat.
Pat salmon dry and brush with olive oil. Season with salt and pepper.
Grill salmon skin-side down (if applicable) for 4–5 minutes, then flip and cook 3–4 more minutes until cooked through and flaky.
Top each fillet with a spoonful of lemon dill butter just before serving.
Tips and Tricks
Avoid overcooking the salmon by removing it from the heat just as it turns opaque, flaking easily.
If you’re out of fresh dill and short on time, you can substitute dried dill in instead.
For crisper skin on the salmon, pat it dry before grilling and cook for longer when it’s skin-side down.

FAQs
Q: Can I make this in the oven instead of on a grill?
A: Yes, bake the salmon at 400°F (200°C) for 12–15 minutes, or until it’s easy to flake. For a golden top, broil for the last 2-3 minutes.
Q: Can I make the sauces ahead of time?
A: The lemon dill butter can be made up to 3 days in advance but the white sauce is best when fresh so the maximum time before serving would be around 3 hrs.
