Line a baking sheet (approx. 9×13 inches) with parchment paper.
In a bowl, mix yogurt, vanilla extract, and honey/maple syrup until smooth.
Spread the yogurt mixture onto the baking sheet in an even layer, about ¼ inch thick.
In a separate bowl, whip heavy cream to stiff peaks.
Freeze for at least 3–4 hours, or until completely firm.
