1 cup (2 sticks) unsalted butter, softened
½ cup granulated sugar
2 cups all-purpose flour
¼ tsp salt
For the Lemon Filling:
1 ½ cups granulated sugar
¼ cup all-purpose flour
4 large eggs
⅔ cup freshly squeezed lemon juice (about 3–4 lemons)
1 tbsp lemon zest
Optional for Serving:
Powdered sugar, for dusting



Step-by-Step Instructions
Make the Shortbread Crust
Preheat your oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper, leaving a little overhang for easy removal.
In a large bowl, cream together butter and sugar until light and fluffy.
Add flour and salt and mix until a soft dough forms.
Press the dough evenly into the bottom of the prepared pan.
Bake for 18-20 minutes, until lightly golden.
Prepare the Lemon Filling
While the crust bakes, whisk together sugar and flour in a bowl.
Add eggs, lemon juice, and lemon zest and whisk until smooth and combined.
Bake the Lemon Bars
Pour the lemon filling over the warm crust.
Return to the oven and bake for 20-25 minutes, or until the center is set and doesn’t jiggle.
Cool and Slice
Let the lemon bars cool completely in the pan. Refrigerate for at least 1 hour before slicing.
