Ingredients
For the Panna Cotta:
1 cup heavy cream
1 cup whole milk
¼ cup granulated sugar
1 tsp pure vanilla extract
2 tsp powdered gelatin
3 tbsp cold water
For the kiwi topping:
3 ripe kiwis, peeled and diced
1 tbsp sugar (optional, depending on sweetness of kiwis)
1 tsp lemon or lime juice
1 tsp cornstarch mixed with 1 tbsp water (for thickening, optional)



Step-by-Step Instructions
Make the panna cotta base
In a small bowl, combine gelatin and cold water. Let sit 5 minutes to bloom.
In a saucepan, heat cream, milk, and sugar over medium heat. Stir until sugar dissolves and mixture is hot but not boiling.
Remove from heat and stir in bloomed gelatin until fully dissolved. Add vanilla.
Pour into serving glasses or ramekins. Chill for at least 4 hours or until set.
Make the kiwi topping
Blend kiwi, lemon/lime juice, and sugar (if using) until smooth.
For a thicker topping, simmer the kiwi puree with the cornstarch mixture for 2–3 minutes, then let cool.
Serve
Spoon cooled kiwi sauce over set panna cotta just before serving or once panna cotta is firm.
Tips and Tricks
Allow the gelatin to fully bloom as this will ensure a smooth texture.
Only heat the cream gently, DO NOT boil otherwise it will split.
