1 ½ cups graham cracker crumbs (about 10–12 crackers)
⅓ cup melted butter
3 tbsp sugar
For the Key Lime Filling
1 can (14 oz) sweetened condensed milk
½ cup sour cream
½ cup key lime juice (fresh or bottled)
1 tbsp key lime zest
For the Lemon Glaze
⅓ cup lemon juice (fresh is best)
½ cup sugar
1 tbsp cornstarch
¼ cup water
1 tbsp butter
Optional: a few lemon zest strips for garnish



Step-by-Step Instructions
Make the Crust
Preheat your oven to 350°F (175°C).
In a bowl, mix graham cracker crumbs, melted butter, and sugar until well combined.
Press the mixture firmly into the bottom and up the sides of a 9-inch pie dish.
Bake for 8–10 minutes, then let cool while you make the filling.
Make the Key Lime Filling
In a medium bowl, whisk together the sweetened condensed milk, sour cream, key lime juice, and zest until smooth.
Pour the mixture into the prepared crust.
Bake for 10–12 minutes, or until small bubbles form around the edge. The center should still have a slight jiggle.
Let cool at room temperature, then chill in the fridge for at least 3 hours.
Make the Lemon Glaze
In a small saucepan, whisk together sugar, lemon juice, cornstarch, and water.
Cook over medium heat, stirring constantly, until the glaze thickens (about 5 minutes).
Remove from heat and stir in the butter. Let cool slightly.
Glaze & Serve
Once the pie is fully chilled, pour the cooled lemon glaze over the top and smooth with a spatula.
Garnish with lemon zest or lime slices if desired. Slice, serve, and enjoy!
