Ingredients
For the Soup:
2 tbsp olive oil
1 medium onion, chopped
3 cloves garlic, minced
1 tbsp fresh ginger, grated (or 1 tsp ground ginger)
1 ½ lbs sweet potatoes (about 2 large), peeled and diced
3 large carrots, peeled and chopped
1 tsp ground cumin
½ tsp smoked paprika
Salt and pepper to taste
4 cups vegetable broth
1 cup coconut milk (or any milk of choice for creaminess)
Juice of ½ a lemon (optional, for brightness)
Fresh herbs or seeds for garnish (optional)



Step-by-Step Instructions
Sauté
In a large pot, heat olive oil over medium heat.
Add onion and sauté until soft, about 4-5 minutes. Add garlic and ginger, cooking for another minute.
Simmer
Stir in sweet potatoes, carrots, cumin, paprika, salt, and pepper. Cook for 2 minutes, stirring occasionally.
Pour in vegetable broth. Bring to a boil, then reduce heat and simmer for 20-25 minutes, until vegetables are tender.
Blend
Remove from heat. Use an immersion blender directly in the pot, or transfer in batches to a blender. Blend until smooth.
Finish
Stir in coconut milk and lemon juice. Taste and adjust seasoning.
Reheat gently if needed.
