Ingredients
For the Skewers:
1½ lbs (680g) flank or sirloin steak, cut into 1½-inch cubes
1 tbsp olive oil
1 tsp smoked paprika
1 tsp garlic powder
Salt and black pepper, to taste
Wooden or metal skewers (if wooden, soak for 30 minutes)
For the Chimichurri:
1 cup fresh parsley, finely chopped
¼ cup fresh cilantro (optional), chopped
4 garlic cloves, minced
2 tbsp red wine vinegar
½ tsp crushed red pepper flakes (adjust to taste)
½ tsp dried oregano
½ cup olive oil
Salt and black pepper, to taste
Juice of ½ lemon (optional for extra brightness)



Step-by-Step Instructions
Marinate the Steak
In a bowl, toss steak cubes with olive oil, paprika, garlic powder, salt, and pepper. Let marinate for at least 30 minutes (or up to 4 hours in the fridge).
Make the Chimichurri
In a bowl, combine parsley, cilantro, garlic, red wine vinegar, red pepper flakes, oregano, olive oil, and salt/pepper.
Stir to combine.
Add lemon juice if using. Let sit while you cook the steak for best flavor infusion.
Assemble the Skewers
Thread the marinated steak onto skewers, leaving a little space between pieces for even cooking.
Grill or Cook
Grill over medium-high heat for 2–3 minutes per side, or until your preferred doneness. You can also cook them in a grill pan or cast iron skillet indoors.
Serve
