Italian flavors reminding us of the summer sun, dining al fresco but the coziness of this dish bringing us into the warm hug of fall.

Ingredients
1 lb ziti (or penne)
1 tbsp olive oil
1 lb Italian sausage (mild or spicy), casings removed
3 cloves garlic, minced
1 small onion, diced
1 (24 oz) jar marinara sauce (or homemade)
1 (15 oz) can crushed tomatoes
1 tsp dried oregano
½ tsp red pepper flakes (optional)
Salt and pepper, to taste
3 packed cups fresh spinach (or 1½ cups frozen, thawed and drained)
1 cup ricotta cheese
1 ½ cups shredded mozzarella, divided
½ cup grated Parmesan cheese
1 egg (optional – for creamier ricotta layer)
Fresh basil or parsley for garnish (optional)



Step-by-Step Instructions
Cook the Pasta
Cook ziti in salted water until just al dente. Drain and set aside.
Make the Sausage Mixture
Heat olive oil in a large skillet over medium heat. Add sausage, breaking it up as it browns. Once fully cooked, stir in onion and garlic. Sauté until fragrant and soft, about 3–4 minutes.
Add Sauce & Spinach
Pour in marinara and crushed tomatoes. Stir in oregano, red pepper flakes, salt, and pepper. Simmer for 10 minutes. Add spinach and cook until wilted. Turn off heat.
Mix Ricotta Layer
In a small bowl, mix ricotta, ½ cup mozzarella, Parmesan, and the egg (if using). Season with a pinch of salt and pepper.
Assemble the Ziti
Preheat oven to 375°F (190°C). In a 9×13″ baking dish:
- Sprinkle the top with the remaining mozzarella
- Spread a little sauce on the bottom
- Layer half of the pasta, half of the ricotta mixture, and half of the sauce
- Repeat with remaining pasta, ricotta, and sauce

Cover with foil and bake for 20 minutes. Remove foil and bake for another 10–15 minutes, or until bubbly and golden on top. Let rest for 5 minutes before serving.
Tips and Tricks
Want a spicy kick? Use spicy sausages for that extra kick.
Avoid overcooking the pasta as it will finish cooking in the oven.
Using frozen spinach? squeeze out excess liquid so that it’s not too watery.
Make ahead – assemble the ziti and keep in the fridge for up to 24 hrs and then bake.

Q: Can I freeze baked ziti?
A: Definitely! Make sure that you allow it to cool down before wrapping it up super tight and then you can freeze it for up to 2 months. When you’re ready to eat it, let it defrost overnight before you reheat it, you can bake it from frozen but you’ll have a longer cooking time and will have to cover it in foil in the oven for longer.
Q: Can you make it vegetarian?
A: 100% yes! swap out the sausages for veggie sausages or use lentils or sautéed mushrooms as a vegetable alternative.
