For the Filling:
28 oz blocks cream cheese, softened
1cuppowdered sugar
1tspvanilla extract
1tbsplemon juice
1 ¼cupsheavy whipping creamcold
Instructions
Make the Crust
In a bowl, mix graham cracker crumbs, melted butter, and sugar until combined and the mixture resembles wet sand.
Press firmly into the bottom of a 9-inch springform pan or pie dish. Chill in the fridge while you prepare the filling.
Make the Filling
In a large bowl, beat cream cheese until smooth. Add powdered sugar, vanilla, and lemon juice, and mix until fully combined and creamy.
In a separate bowl, whip heavy cream to stiff peaks.
Gently fold the whipped cream into the cream cheese mixture in batches until smooth and fluffy.
Assemble & Chill
Spread the filling evenly over the prepared crust.
Cover and chill in the refrigerator for at least 6 hours, or overnight, until set.
Serve
Slice and serve chilled, topped with your favorite fruit, chocolate shavings, or whipped cream.
