12 oz fettuccine or pasta of choice
2 tbsp unsalted butter
3 cloves garlic, minced
1 cup pumpkin purée (unsweetened)
¾ cup milk (or unsweetened dairy-free alternative)
½ cup heavy cream
¾ cup grated Parmesan cheese (plus extra for serving)
¼ tsp ground nutmeg
Salt and pepper, to taste
Optional: 1 tbsp fresh sage or thyme, finely chopped
Pasta water (as needed, for thinning sauce)



Step-by-Step Instructions
Cook the pasta
Cook the pasta in a large pot of salted boiling water according to package directions. Reserve ½ cup of pasta water, then drain and set aside.

Make the sauce
In a large skillet over medium heat, melt the butter. Add garlic and cook for 1 minute until fragrant.

Build the Sauce + mix
Stir in the pumpkin purée, milk, cream, nutmeg, and a pinch of salt and pepper. Let simmer for 3–4 minutes, stirring often.
Lower the heat and stir in the Parmesan cheese. If the sauce is too thick, add a splash of pasta water to loosen it.
Toss the cooked pasta into the sauce and stir to coat evenly.
Serve
Serve hot, topped with extra Parmesan and fresh herbs if using.
