3–4 lb chuck roast
1 tbsp olive oil
1 tsp salt
½ tsp black pepper
1 onion, chopped
4 garlic cloves, minced
4 carrots, peeled and cut into chunks
3–4 potatoes, cut into chunks
2 cups beef broth
2 tbsp tomato paste
2 tsp Worcestershire sauce
2 sprigs fresh thyme (or 1 tsp dried)
1 sprig rosemary (or ½ tsp dried)
2 bay leaves



Step-by-Step Instructions
Sear the beef
Heat olive oil in a skillet over medium-high heat. Season the roast with salt and pepper, then sear on all sides until browned (about 3–4 minutes per side).
Layer the slow cooker
Add onions, garlic, carrots, and potatoes to the bottom of your slow cooker. Place the seared beef on top.
Make the broth
In a small bowl, whisk together the beef broth, tomato paste, Worcestershire sauce, and herbs. Pour it over the beef and veggies.
